Food Allergies Affect 8% of Children

According to a recent study published in the journal Pediatrics, about 6 million American children ages 17 and younger have a food allergy. About 2 million of those children suffer from an allergy so severe that it could send them into anaphylactic shock with possibly fatal results.

Researchers who analyzed the survey results claimed that this number has grown in recent years as food intolerance and allergies in both children and adults have risen. There are several theories that explain the jump in allergic reactions, but none of them have been proven definitively. Some scientists attribute allergies to the introduction of more pesticides and genetically modified foods into the American diet.

Food allergies can develop at any point in life. Often, allergies to milk, eggs, and soy develop in early childhood but disappear after adolescence. However, sensitivity to foods such as gluten (wheat) or corn can begin in adulthood.
